MIDAS TOUCH  750 AD   Inspired by ingrediens found in 2,700 year old drinking vessels from he tomb of King Midas, Midas Touch is somewhere between beer and mead feauring malt, honey, white grape juice and saffron.  A sweet yet dry beer that appeals to beer and wine drinkers alike.

THEOBROMA  1200 BC  A celebration of Chocolate, "food of the gods".  Based on chemical analysis of potery fragments in Honduras, this earliest known alcoholic chocolate drink is brewed with cocoa powder, cocoa nibs, honey, chilies & annatto.

SAH'TEA   900 AD   A modern ake on a 9h cenury Finnish farm-style beer that is one of he world's oldest continuously brewed styles of beer.  Casks of "sahti" were found aboard a sunken Viking ship dating back to he 9th century.  Fermented with a wheat yeast, Sah'Tea includes rye malt, black tea, marsala chai spices and juniper berries.

CHICHA   The Central & South American native corn beer.  he Doghish recipe is most closely based on the Peruvian brewing tradition.  Our homebrew recipe makes a beverage that is dry, fruity, complex and refreshing using malt, flaked maize, blue corn sryup, pepper berries, strawberries and of course purple corn.  Request whole blue corn instead of crushed to make Chicha the traditional "chew & spit" way.

PULQUE   Ancient Mexico meets modern beer in he Dogfish twist on a popular Mexican corn drink.  Our homebrew versin brings you malts, guava, jalapeno peppers, mesquite powder, agave syrup, blue corn syrup and purple corn.  Make the traditional "chew & spit" Pulque with whole purple corn or request crushed corn.

CHATEAU JIAHU   Unearthed from a 9000 year old tomb in China, Chateau Jiahu is based on the oldest fermented beverage in history.  In keeping with historic evidence, the homebrew recipe features rice syrup solids, barley malt, honey, white grape juice, sweet orange peel and Hawthorn Berries.

KVASIR    This hybrid ale was discovered in a Nordic drinking vessel found in a tomb in the upper regions of Scandinavia.  The Dogfish interpretation for Kvasir is a tart, complex grog.  The XBS homebrew recipe combines Wheat Malt, Lingonberry, Cranberry, Meadow Sweet, Yarrow, Honey & Birch Bark.

BIRRA ETRUSCA   Analysis of drinking vessels in Etruscan tombs proves early Italians had a taste for ale.  Our homebrew version of the Dogfish Head Etrusca is brewed with barley malt, honey, roasted hazelnuts, myrrh, pomegranates, raisins, and figs with gentian root adding to the bitterness.

TA HENKET   using ingredients and traditions plucked from Egyptian heiroglyphics, Dogfish created this modern golden ale.  Our homebrew recipe brings you malt, emmer, dates, chammomile and Za'atar to brew your own dry, crisp ale commplete with ingredients to bake the whole wheat bread that is the heart of Ta Henket.
